How to Use
These little sweeties are ready for any recipe that asks for peeled plum tomatoes. They can also be diced, crushed or pured as needed.
Coconut Tomato Curry
Cook 1 diced onion in a tsp oil on low heat until soft. Add 2-4 tbsp curry paste, 1 can chick peas and 1 can plum tomatoes, mashed. Simmer for 5 mins, stirring frequently. Add 1 can coconut milk and simmer for 10-15 mins until thick.
Garlic Tomato Sauce
Cook 2 chopped garlic cloves and 1 diced onion in a tbsp oil until soft. Add 1 can plum tomatoes, pinch of black pepper and mash together. Simmer for 5-10 mins until thick.
Roasted Carrot and Tomato Soup
Roast 3 large chopped carrots in 2 tbsp oil at 200C fan for 30-45 mins. Blitz carrots and 120ml water, pour into pot. Blend 1 can tomatoes, add to pot with 480ml water. Add black pepper, 1/2 tsp garlic granules and 1 tbsp vinegar. Simmer for 10 mins.
